Artichoke-Stuffed Chicken

Health-focused magazines and cookbooks are an obvious source of heart-healthy recipes, but you can add to your stash of favorites by searching in countless other places – including cookbooks packaged with kitchen appliances.

A few Christmases ago, I received a George Foreman grill — a great tool for grilling chicken, meat or vegetables in a hurry. One easy and delicious selection from the recipe book is Artichoke-Stuffed Chicken.

I begin by blending canned artichoke hearts (drained and rinsed), grated Romano cheese, garlic, lemon zest and juice, and olive oil in a food processor. Next, I stuff this mixture into the pockets of four butterflied chicken breast halves. I cook the chicken on the George Foreman grill according to directions. Less than 10 minutes after I place them on the grill, we have dinner.

The stuffing is lemony and flavorful and keeps the chicken delicious and juicy.

  1. I love artichokes! This sounds great. Would I saute or bake it, do you think, if I don’t have the George Foreman grill?
