Chocolate Satisfaction

In addition to warm savory dishes, I also long for chocolate on cold winter days. And most other days, if the truth be told!

When the craving hit on a recent weekday evening, I turned to a recipe my cousin gave me long ago:


Chocolate Cherry Cake

Preheat oven to 350°F and combine the following well:

One chocolate cake mix

One can cherry pie filling

Three eggs (I used ¾ c. egg substitute instead)

1 tsp. almond extract

Spread this mixture in a greased and floured 13 x 9-inch pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Although it’s a simple recipe, it’s great for a quick chocolate fix. We skipped the frosting and served it warm—yum! My son topped his with frozen yogurt.
