Quick–And Delicious

In my last post I wrote about being mindful during meals. But—let’s face it—some days it can be hard enough to get dinner on the table, never mind relaxing as you eat it.

Part of the secret to peaceful meals is to conserve your energy during the prep. Keep a stash of easy-to-prepare healthy recipes that require only a few simple ingredients, yet are flavorful and absolutely delicious. If you spend less time cooking, you’ll have more time to spend with your family.

One of my favorite simple recipes is Chicken Breasts with Tomatoes and Olives, published in the September 2009 issue of Cooking Light. Simply grill (or saute) the chicken breasts, brush them with oil and vinegar dressing and top with a mixture of olives, tomatoes and dressing. I serve the chicken over couscous and add a vegetable and salad. To further reduce fat and sodium, I use fewer olives (opting for kalamata olives), mix my own oil and vinegar for the dressing, and skip the feta cheese. And don’t forget the basil, which the recipe states is optional but I think is essential.

This meal is quick enough for weeknights, and Cooking Light also deems it “Worthy of a Special Occasion.” I recently prepared it for my parents, and they loved it. My husband also gives it his highest rating!
